My story
Edith lives with her family in the small village of Colsano. She owns Josmoar farm which is run by Thomas. Half of the trees on the Josmoar farm are Golden Delicious and the rest are red-skinned varieties: Gala, Braeburn, Fuji, Pinova and Red Delicious. The dry stone walls in the orchards were built with some of the remains of the Via Claudia Augusta Roman road which linked the Danube to the Adriatic long ago. Thomas is conscious that perfect apples demand a lot of work. For example, gently pruning the trees to give them structure and increase yield, regular and frequent checks on the trees, and bringing in the harvest by hand. Thomas has been organic since 2006. It was a new challenge for him, involving a less interventionist approach and better health all round. Thomas sees organics holistically: only by taking responsibility for the environment and the earth beneath our feet can we take responsibility for ourselves. That, he says, is what sustainability is all about.
