My story
I’m a great wine lover. There are between 300 and 400 aromas that hide in the juice of the grape of Bacchus, the god of wine, and express themselves in different ways. I haven’t thought much about how many aromas there are in apples until recently. Since my conversion to organic, however, this has changed. When eating an apple, I would like to have an intense taste experience and to offer the consumer the apples I like most.
For me, the conversion to organic production wasn’t possible for a long time because my orchards were too scattered and all surrounded by several neighboring orchards where apples were cultivated according to the principles of integrated production. One orchard even had up to seven different neighbors. Today, the „Partlhof“ farm in Laces is 100 percent organic. As co-author of the book entitled „Discovering South Tyrolean wines“ I'm constantly looking for the perfect aroma mix which I then try to describe with words. I collect wines from all over the world. It’s not unusual that my tractor is parked in the yard because I temporarily store wines in my garage.
Wine is my great passion. Since recognizing similar aromas in my organic apples as well, I like fruit growing as much as wine and it gives me true joy. I have more and more specialized in varieties that are harvested in late summer over the time. So I still have enough time for enjoying wines, my seminars and my work as an author. My book is already in its 4th reprint. Who knows, maybe I’ll write a book about apple aromas one day. I wouldn't rule it out now that I’m an organic producer.
