Apple bread pudding with organic Bio Golden Delicious apples

Apple bread pudding is an old traditional South Tyrolean recipe with old bread soaked in milk, eggs and sugar. Try this version with crunchy Golden Delicious apples, raisins, cinnamon and a glaze of apricot jam and beaten egg whites.

Ingredients

for 6-8 persons

for the apple bread pudding
4-5 stale bread rolls (or other stale bread or brioches)
2 large eggs
2 large egg yolks
340 ml milk
30 g sugar
3-4 organic Golden Delicious apples
20 g sugar
1 tsp. cinnamon
2 tbsp. raisins
80 g apricot jam

for the meringue
2 large egg whites
120 g sugar

Preparation

For the apple bread pudding with organic Golden Delicious apples cut the bread rolls into slices of approx. 1 cm thick. Put the eggs, egg yolks, milk and sugar in a baking dish. Beat briefly with a whisk until homogeneous. Then soak the bread slices in the milk and egg mix on both sides and place them upright in the baking dish, one next to the other. Set aside. Preheat the oven to 180°C (static).
Wash and peel the organic Golden Delicious apples, divide them into quarters, remove the core and then slice finely. Put the sliced apples in a bowl, add sugar, cinnamon and raisins and mix.
Take a baking dish of approx. 20 x 30 cm and grease it. Then cover the bottom of the dish with a layer of bread slices soaked in the milk and egg mix. Cover with half of the apples. Then make another layer with the remaining bread slices and finish with the cinnamon apples. Distribute any remaining liquid over the apples. Spread the apricot jam over the entire surface and bake at 180°C for 35 minutes. Start whisking the egg whites with sugar until stiff 10 minutes before the end of the baking time, as this will take about 10 minutes.
Remove the apple bread pudding from the oven, distribute the beaten egg whites over the entire surface and then make tufts of meringue with the help of a spoon. Bake again at 180°C for approx. 10 minutes on the top shelf of the oven. Then place the handle of a wooden spoon in the door of the oven to leave a small opening and continue baking for another 5 minutes. Remove your apple bread pudding with organic Bio Golden Delicious apples from the oven and serve immediately.
