300 g flour
200 g sugar
150 g melted butter
3 eggs
Lemon zest
8 g baking powder
3 Gala apples
Gelatin or honey
Powdered sugar

Preparation

When preparing the apple gateau with roses you start with the main ingredient of this dessert with great effect: the apples. First peel one of the 3 apples and cut into small cubes. Put the cubes in a bowl with acidulated water so that they don’t get brown. Then cut the other two apples without peeling into thin slices with the help of a mandolin, pass through acidulated water and steam for a few minutes. Then let cool. When cold arrange the apple slices cut into halves slightly one on top of the other on the countertop so that you get as many strips as you need for your roses.
When rolling up the apple slices start with the first one on the countertop. Prepare 6 roses in so doing. In the meantime, prepare the cake base by beating the eggs with sugar and lemon zest. Add melted butter and sieved flour with baking powder little by little.
Add the apple cubes and mix well.

Put the dough into a buttered and floured form with a diameter of 20 cm and arrange the 6 roses in a circle on the dough.
Bake in the oven at 180°C for an hour. Use the toothpick test to see if the cake is done. If the toothpick is dry, you can remove the cake from the oven. Let cool. Raise petals of roses sunk into the dough with the help of tweezers if necessary. Cover the roses with honey or gelatin for a beautiful sheen and finish with a sprinkle of powdered sugar.
