Bread pudding with curd

Ingredients

6 old rolls
1/2 l milk
3-4 apples
250 g low-fat curd cheese
3 eggs
150 g sugar
50 g raisins
1/2 teaspoon cinnamon
a pinch of salt
1/2 shot glass rum
50 g butter

Preparation

Cut the rolls in cubes or slices, pour over hot milk and let steep. In the meantime, peel the apples and either cut in fine cubes or grate them.
Separate the eggs and mix the egg yolks with curd and sugar. Then add the curd mixture together with raisins, apples and cinnamon to the bread mixture.
Whisk the egg whites with salt till stiff and fold in. Put into a greased baking form and sprinkle with rum and small knobs of butter. Bake in the oven at 160 C for about an hour.
