2 tbsp mustard
150 ml fresh cream

To prepare chicken with Golden Delicious apples, peel and finely chop the onion and garlic cloves, then set aside. Cut the chicken breast into 8-9 long strips and coat them in flour. Heat 2 tablespoons of olive oil in a pan and sear the floured chicken strips. Cook for about 5 minutes on each side, then remove from the pan and set aside. Meanwhile, wash the Golden Delicious apples, remove the core, and slice them into thin wedges. In the same pan, melt the butter and sauté the apple slices for a couple of minutes until slightly softened. Remove from the pan and set aside.
In the same pan, heat another 2 tablespoons of olive oil, then add the chopped onion and garlic. Sauté over high heat for about 5 minutes, stirring frequently, until the onions soften. Add the washed and dried thyme, rosemary, and sage, and stir. Deglaze with white wine and let it evaporate. Add the mustard and fresh cream, season with salt and pepper, and bring to a boil while stirring. Return the chicken strips to the pan, cover, and let everything simmer for 6-7 minutes until the chicken is fully cooked. If the sauce becomes too thick, add a little water.
Finally, add the Golden Delicious apple slices and heat everything through for one more minute. Serve the chicken with Golden Delicious Val Venosta apples topped with freshly ground pepper.
