Chocolate mince pies

with Gala apples and kumquats

Mince pies are Santa Claus’ favorite sweet pies according to tradition and are prepared at Christmas time.

Ingredients

for 12 pies

190 g flour 00
20 g cocoa powder
80 g butter
50 ml cold water
1 pinch of salt

for the filling

2 Gala apples
a dozen kumquats
2 tbsp. chopped pistachios
1 tsp. ginger powder
50 g cane sugar + 1 tbsp. for decorating
1 tbsp. rum

Preparation

Sieve flour with cocoa powder in a large bowl. Add salt and butter and knead with the fingertips. Add a little bit of cold water to the dough and knead until you get a compact and elastic dough ball. Wrap the dough in cling film and let rest in the fridge for 30 minutes.

Then prepare the filling called mincemeat: Wash apples, remove the core and cut into small cubes. Cut the kumquats into slices and remove the seeds. Mix the fruit with coarsely chopped pistachios, ginger powder, sugar and rum in a bowl and let rest for an hour.
Roll out the dough and cut out circles. Line slightly buttered muffin molds with the dough and distribute the filling on the dough. Cut out stars from the remaining dough with a cookie cutter and cover the pies. Slightly brush with the mincemeat liquid and sprinkle with a little bit of cane sugar.
Bake in the preheated oven at 180°C for about 20-25 minutes.
