Cinnamon biscuits with organic Red Delicious apples

These delicious biscuits flavored with ginger and cinnamon are fragrant winter treats. The pleasantly pungent note of the spices in the dough is sweetened by the unmistakable flavor of organic Red Delicious apples. Excellent to soak in hot tea, these fragrant biscuits give a warm smile even on the cold winter days.

270 g flour
2 tsp. cinnamon
1 tsp. ginger powder
1/3 tsp. baking soda
2 pinches of salt
190 g butter (room temperature)
80 g brown sugar
80 g sugar
1 tbsp. vanilla sugar
1 egg (room temperature)

Preparation
For the cinnamon biscuits with Red Delicious apples, mix flour with cinnamon, ginger powder, baking soda and salt and set aside. Whisk butter with brown sugar, sugar and vanilla sugar until clear and creamy. Add egg and beat with an electric mixer until completely incorporated. Sieve the flour mix on the butter and egg mixture and briefly work with an electric mixer to a homogeneous dough.
Preheat the oven to 160°C (top/bottom heat) and line two baking trays with baking paper. Wash and dry apples and cut them into thin slices 2-3 mm thick. You can either use the whole apple slices or cut out the center with the help of a small pastry cutter to later fill the holes with sliced almonds. Prepare a small bowl with 2-3 tablespoons of brown sugar.
Then form walnut-sized balls with the dough, roll them in brown sugar and put them on a baking sheet lined with baking paper (not too close to each other). When all balls are ready, cover them with a piece of baking paper and flatten them with the help of a meat mallet or the bottom of a glass. The baking paper prevents the dough from sticking to the glass. Put an apple slice on each dough disc and fill the holes with sliced almonds. Bake in the oven at 160°C for approx. 25 minutes. Your biscuits might be slightly soft in the center.
Take your cinnamon biscuits with Red Delicious apples out of the oven and allow them to cool for about ten minutes before removing them from the baking tray.
