Are you looking for a healthy, light, super nutrient and simply delicious recipe? Then try this wonderful cream of cauliflower with apples and almonds and you will love it!
Peel apples and potatoes and cut into small pieces. Cut the cauliflower florets into halves.
Gently fry chopped shallot with olive oil in a casserole. Add potatoes and deglaze with white wine. As soon as the alcohol has evaporated, add cauliflower florets and thyme. Salt and cover with water. Bring to boil, cover and cook for 15-20 minutes at low heat.
When the vegetables are cooked, add apple cubes and pepper. Salt if necessary and mix until creamy.
Divide the cream of cauliflower and apples among four plates.
Complete each plate with a tablespoon of sour cream, toasted almond slivers and thyme, and serve.
