Gyozas with Red Delicious apples and pork

The irresistible encounter between fusion cuisine and South Tyrolean apples

Goyzas are typical Japanese meat dumplings that are prepared with a very simple dough consisting of flour, starch and water. This is an inviting variant with a sweet-and-sour aftertaste where the crunchy sweetness of Red Delicious apple is added to the traditional pork filling. You won’t get enough of these delicious, tasty and slightly spicy gyozas that satisfy every palate.

Ingredients

for 15 gyozas

120 g flour
Potato starch for kneading
80 g water
80 g ground pork
1 Red Delicious apple
1/2 spring onion
Chili pepper
Seed oil
Pepper or ginger to taste

Preparation

Put flour and starch in a bowl and work by adding water a little at a time. First knead with a wooden spoon (or with chopsticks) and later with your hands on a clean work surface for about ten minutes until the dough is soft, firm, smooth and no longer sticky. Let rest for 30 minutes and prepare the filling in the meantime.
Mix apple cut into small pieces with ground pork, a pinch of pepper and/or ginger, finely chopped spring onion and a small splash of white vinegar or white vinegar glaze in a bowl.
After the resting time roll the dough into a stick on the work surface. Cut the roll into pieces about 2 cm thick and roll each piece like a meatball. Then roll out each ball to a circle with a diameter of 5 cm with a rolling pin. Place some of the filling at the center and close in a crescent by simply pressing the edges or with the help of the typical gyoza folds.
Heat a pot or a large pan with plenty of oil, add gyozas and fry. Deglaze with a glass of water (or vinegar if you prefer), add chili pepper and allow the gyoza to steam a little.
