Puff pastries with ricotta cream and strawberries

Our puff pastries with ricotta cream and strawberries are delicious classical sweets that can be prepared with only a few ingredients at the last minute.

Ingredients
for 12 puff pastries

250 g strawberries
25 g butter
150 g cow’s milk ricotta
65 g sugar
1 yolk
12 g cornstarch
½ vanilla bean

Preparation
Wash and dry strawberries, remove the stalks, cut into pieces, and put aside. Melt butter, put aside and allow to cool.
Mix ricotta, sugar, yolk, cornstarch, and the seeds of the vanilla bean to a homogenous cream in a bowl with a hand mixer. Add melted lukewarm butter drop by drop and continue mixing with the hand mixer. Put aside when ready.
Preheat the oven to 190°C (hot air) and line a baking tray with baking paper. Roll out the puff pastry and cut out 12 squares. Put one tablespoon of ricotta cream on each puff pastry square and distribute it diagonally from one end to the other. Put 5-6 strawberry pieces on the cream. Fold the two opposite ends without any cream towards the center, overlap the ends and press them together so that they won’t open during baking.
Arrange the puff pastries on the baking tray and sprinkle with plenty of powdered sugar. Bake in the oven at 190°C for about 15 minutes. Take out of the oven and allow to cool. Alternatively, you can also serve your puff pastries with ricotta cream and strawberries lukewarm with a sprinkling of powdered sugar.
