Red cabbage with Royal Gala apples

A side dish you will simply love

Red cabbage with apples is a very delicious side dish that is easy to prepare. This winter dish is inventive and traditional at the same time. You first marinate the red cabbage in vinegar und you then slowly cook it in a pan with sliced Royal Gala apples and a little bit of sugar. The result is a pleasantly sweet-sour side dish.

Ingredients

for 4 portions

1 red cabbage
2-3 Royal Gala apples
3 tbsp. extra virgin olive oil
1 onion
1.5 dl vinegar
1 tbsp. sugar
Salt
Pepper

Preparation

You first have to clean the cabbage. Remove the hard outer leaves, divide the cabbage into two parts and remove the core. Cut it into strips and put them in a colander. Wash and dry carefully. Then put the cabbage strips in a bowl, salt, pepper, add vinegar and allow to marinate for 15 minutes.
Fry chopped onion in a large pan with oil, add cabbage strips and cook over medium/low heat for about 1 hour and 15 minutes. 30 minutes before the end of cooking time, peel apples and cut them into slices.
Put the apple slices in a bowl, sprinkle with sugar and mix. Then add to the red cabbage in the pan and cook for another 15 minutes until your red cabbage with apples is ready to be served.
