Salad of legumes with Bonita apples, broccoli, oranges and walnuts

Ingredients

250 g mixed legumes (beans, lentils, chick peas), boiled
250 g broccoli florets
2 oranges
2 Bonita apples
100 g walnuts
4 tbsp. extra virgin olive oil
2 tbsp. vinegar
1 tbsp. tahini
2 tbsp. sesame seeds
Salt
Pepper
250 ml water
20 ml lemon juice

Preparation

Heat 2 tablespoons of olive oil in a large pan, brown broccoli florets for 5 minutes and then let cool. Fillet one orange.
Wash apples, remove the core, slice thinly and immerse in water with lemon juice for about 5 minutes. Mix the remaining oil with vinegar, orange juice and tahini and stir vigorously to an emulsion with a whisk.
Dress the legumes with the emulsion (put a little bit aside), add broccoli florets, drained apples and orange fillets. Mix with clean hands, add the remaining emulsion and walnuts and sparkle with sesame seeds.
