Ingredients

for 2 persons

300 g chicken breast
1 Golden Delicious apple
100 g mixed leaf lettuce
1 lemon
Olive oil extra virgin
Salt
Pepper
1 handful of dried cranberries

Preparation

Prepare the marinade with 1 tablespoon of olive oil, 1 tablespoon of water and the juice of half a lemon. Fill the chicken breast in a freezer bag together with the emulsion and let marinate in the fridge for at least 30 minutes. The more time you allow the chicken to marinate, the better and more tender it becomes.
Grill the chicken breast in a hot grill pan dusted with a little bit of salt for 3-4 minutes on each side. Then allow to cool and cut into strips. Thinly slice the apple and decorate the center by cutting out stars or hearts with a cookie cutter. Soak the apple slices in water with the juice of half a lemon to avoid browning.
Put previously washed leaf lettuce, grilled chicken breast, drained apple slices and a handful of cranberries in a bowl, season with olive oil and salt, mix well and serve immediately.
