Scones with apricots and coconut flakes

There is no tea time without the famous scones. These typical Scottish pastries made with flour, butter and a bit of sugar are normally eaten with jam and honey. We suggest you a recipe with fresh apricots and coconut flakes.

Ingredients

for 9 scones

240 g flour 00
115 ml whole milk
30 g coconut flakes
45 g soft butter
2 tsp. baking powder
2 tbsp. sugar
Salt
4 Val Venosta apricots

Preparation

Put sieved flour with baking powder, coconut flakes, soft butter pieces, sugar and salt in a bowl and start kneading by adding milk little by little until you get a soft, not sticky dough. 
Roll out the dough to 3 cm thick on a floured work surface. Cut out circles with a round cookie cutter of 5 cm and place them a little bit apart from each other on a baking tray covered with baking paper. 
Distribute the apricots cut into small pieces on the scones and sprinkle with coconut flakes. Bake in the preheated oven at 180°C for 15-20 minutes.
