Soft apple ginger
biscuits

Very delicious, fast and easy

Short pastry biscuits with oil with a soft consistency thanks to the apples and a unique smell thanks to fresh ginger.

Ingredients

for about 20 biscuits

250 g wholemeal flour
80 g whole cane sugar
1 tsp. baking powder
1 egg
70 g sunflower oil
1 Golden Delicious
1½ cm fresh ginger
Juice of 1 lemon

Preparation

Peel the apple and cut into small cubes. Put in a bowl and sprinkle with lemon juice.

Whisk oil and egg into a foamy cream in another bowl.
Add sugar and whisk. Then add grated ginger, flour and baking powder. Whisk until the dough takes shape. Add apple cubes and knead to a soft dough with your hands.
Take a little bit of dough with slightly damp hands, form a little ball, put it on a baking tray covered with baking paper and slightly flatten. Repeat until there’s no more dough left.

Bake the apple biscuits in the hot oven at 180°C for about 12 minutes.
