Ingredients
for about 28-30 cookies260 g whole spelt flour
75 g whole cane sugar + for sprinkling
6 g baking powder
1 vanilla pod
Zest of 1 untreated lemon
1 pinch of salt
1 large
Gala apple (app. 170g of net weight)
60 ml almond milk
25 ml maple syrup
30 ml rice oil

Put flour, sugar, baking powder, seeds of the vanilla pod, lemon zest and salt in a bowl and mix with a spoon.
Peel the apple, remove the core, grate and add to the other ingredients in the bowl. Then add milk, maple syrup and oil and mix to get a homogeneous and soft dough.
Cover a baking tray with baking paper. Take a spoonful of dough and form a cookie with moist hands directly on the tray (the dough will be soft and wet).
Sprinkle the cookies with cane sugar and bake in the oven at 180°C (top/bottom heat) for about 15 minutes. Remove the cookies from the oven and let cool. Serve for a healthy breakfast or snack.
