Spicy jam with Golden Delicious apples

A spreadable delight

The sweetness of Golden Delicious apples meets the aromaticity of cinnamon and star anise in a consistency that satisfies the palate: raisins soaked in rum and toasted almond slices. Ideal with cheese or as a filling for desserts.

Ingredients

for approx. 1 kg of jam

2 tbsp. raisins
3 tbsp. rum
60 g sliced almonds
approx. 1200 g organic Golden Delicious apples
3 tbsp. sugar
2 cinnamon sticks
2 star anises
1 lemon
1/2 vanilla pod
330 g jam sugar 3:1

Preparation

For the spicy jam with Golden Delicious apples, soak raisins in rum. Heat a pan and toast sliced almonds for a few minutes, stirring frequently so that they do not burn. Put aside.
Wash and peel Golden apples, remove the core and cut them into small cubes of approx. 6x6 mm. You should get 1 kg of apple cubes.
Put the sugar in a large pot and let caramelize, which won’t take long. Add apple cubes, cinnamon, anise, lemon juice, raisins soaked in rum and vanilla pod seeds. Cook apples until soft for about 10-15 minutes, stirring occasionally. Add toasted almonds and jam sugar. Mix well and boil for approx. 4 minutes (or according to the instructions on the packaging of the jam sugar).
Fill the jam into sterile jars, immediately close the lid and turn the jar upside down for approx. 5 minutes. Then turn the jar again and allow to cool completely. Store your spicy jam with Golden Delicious apples in a cool and dry place, protected from sunlight. Once opened, keep in the fridge.
