This salad is a feast for the eyes due to its wonderful colors. The combination of quinoa with spinach and Gala apples is just perfect for a light lunch. Rich in proteins, iron and vitamins with a fruity taste.

Ingredients
for 2 persons
1 Gala apple 60 g fresh spinach 70 g quinoa 650 ml water 4 tbsp. olive oil extra virgin 2 tbsp. apple vinegar A pinch of salt 1 spring onion 30 g cashew nuts 1 tsp. linseed
Cook previously washed quinoa in boiling water for some 10 minutes. Strain quinoa with the help of a fine-meshed sieve (or colander) and rinse under cold water to avoid further cooking.
Wash spinach accurately and dry on kitchen paper. Take a bowl and add quinoa with spinach leaves. Wash apples, cut into thin slices and add to the salad together with spring onion cut into rings.
For the vinaigrette mix olive oil, apple vinegar and a pinch of salt with a fork. Dress the salad with the vinaigrette and add linseed and cashew nuts.
