Tartlet with vanilla cream and Golden Delicious apples from Val Venosta

A heavenly dessert for every occasion

This delicious tartlet combines the delicate taste of crunchy short pastry with a creamy vanilla filling. Fresh Golden Delicious apples from Val Venosta give the dessert a fruity note that perfectly harmonizes with the sweet cream. Ideal for special occasions or simply as a sweet treat in between!

Ingredients

For approx. 4-5 tartlets of 7-8 cm in diameter

Short pastry
200 g sugar
200 g butter
Grated lemon zest
Salt
1 yolk
500 g flour
40 g milk
1 g baking powder

Apples
2 Golden Delicious apples from Val Venosta
75 g sugar
20 g apple juice
1/4 cinnamon stick

Vanilla cream
Vanilla pudding

Preparation

Knead sugar with butter to a smooth dough. Then add yolk, grated lemon zest and salt. Alternately add flour and milk. Finally knead in the baking powder. Put the dough in the fridge overnight.

Brush the tartlet molds with butter and dust with flour. Line the tartlet molds with thin dough slices (5mm) and bake until golden brown (convection oven 150°C – approx. 15 minutes).

Peel the Golden Delicious apples, remove the core and cut them into wedges. Slightly heat the apple juice, then slightly caramelize the sugar in a pan and carefully prepare a caramel with the apple juice. Remove from the heat. Place the apple slices in a baking dish, add the cinnamon stick and the caramel, cover with the lid and bake in the convection oven at approx. 160°C for 10-30 minutes (depending on the apple variety).

Fill the cold tartlets with vanilla pudding and cover with the drained apple wedges. You can decorate your tartlets with pine nuts and raisins, if you wish.
