Wholemeal muffins

with Gala apples and spices

A light recipe that’s ideal as an afternoon snack or for breakfast on snowy winter days.
The crunchy apples perfectly harmonize with the spicy notes of the dough and become irresistible.

Ingredients

for 12 muffins

250 g wholemeal flour
100 g cane sugar
1 egg
200 ml milk
60 ml seed oil
2 Gala apples
8 g baking powder
cinnamon and ginger to taste

Preparation

Put egg and sugar in a bowl. Beat and cream with a whisk. Then add milk and oil all at once and mix all ingredients.

Add sieved wholemeal flour and baking powder as well as spices in the desired quantity (e.g. one teaspoon of cinnamon and half a teaspoon of ginger).

Peel apples and cut into small pieces. Use Gala apples for this recipe as they keep their consistency and taste. Add them to the dough with a dough scraper and mix well.


Preheat the hot-air oven to 175°C. Prepare a muffin tin with paper baking molds and fill with the dough by using a spoon until the paper baking molds are three-quarters full.

Bake the muffins for 20 minutes. Then make the toothpick test.
Remove from the oven, let cool and enjoy them as an afternoon snack with a good cup of tea.
